3. Neon Dreams
A 1979 mail plane, a retro-futuristic roller rink, plant-based American diner and a bar serving botanical cocktails have assembled at the Pier Street underpass in Darling Harbour. Random, right? Don’t be quick to shrug it off though, as it may be our favourite thing at Vivid 2025. Strap on your skates and whizz (or wobble) around the rink before you head over to Shannon Martinez’s diner for juicy burgers, creamy mac and cheese and jelly donuts โ all plant-based, of course. Washed down with lemon myrtle margaritas or Illawarra plum sours from Trolley’d or an espresso martini soft serve, it’ll be a night to remember.
Where: Tumbalong Boulevard, under Pier St Overpass, on Tumbalong Boulevard.
When: Daily 6pmโ11pm.
Price: From $18.
