Sydneysiders on social media think they’ve found “the best pie in Australia,” with the latest viral pastry turning a classic bowl of ramen into a monstrously large layered treat.
Blood’s Bakery in Ultimo, which popped into the scene in 2021, is the latest local beneficiary of social media’s tendency towards left-field creations such as this $14 Chasu Pork Belly and Ramen Egg pie.
The bakery, run by former Mr Wong chef Alex Lynn, has formed a new menu of oddball savoury pastries and desserts. And orders are only being taken via Instagram, pushed by a huge surge of demand from locals and tourists.
Alex releases his menu each Tuesday with orders taken via Instagram DM for set pick-up times the following week.
Aside from the viral Chasu pie, Blood’s Bakery is also slinging creations like a Japanese prawn curry pie, a brioche tart of cornflakes with yema custard and strawberry rhubarb.
But it’s that Ramen-loving pastry that has got people on social media all excited.
As per the chef and baker’s Instagram, the pork belly is slowly cooked in a mixture of ginger, sake and soy, dunked in a ramen-like broth, and finished off with sesame, seaweed and shallot. Layers of flaked butter-soaked pastry are then folded over the pork belly with chasu and mushroom.
Alex is selling the Chasu Pork Belly and Ramen Egg Pie for $14 for one, or $23 for a bake-at-home box of two.
The only way to get your hands on this pie is to pay attention to Blood’s Bakery’s Instagram account. Alex posts when orders are open and you simply just need to send him a DM. Pick-up will then be the following week in Ultimo. The pick-up address is only confirmed upon order.
