A new Cantonese restaurant, Stanley will open at Manly Wharf in September.
The brainchild of award-winning chef, Louis Tikaram, the restaurant draws its inspiration from Hong Kong’s Stanley Bay. It will feature live seafood tanks, a custom-built duck oven, the popular Peking duck served tableside and live mud crab. It will seat 212 guests with indoor and outdoor seating, a private dining room and bar.
The opening of the waterfront Stanley marks Tikaram’s return to the Emerald City where he spent a decade working in a string of respected kitchens including Longrain, Bentley Restaurant + Bar and Tetsuya’s.
“Opening Stanley in Sydney is incredibly meaningful to me. Sydney shaped me as a chef. I arrived here as a young apprentice and spent 10 years learning from some of the best people in the industry,” said Tikaram.
“It’s also where I fell in love with the energy of Chinese restaurants. Whether it was breakfast in Chinatown before work or celebrating milestones with family and friends, those experiences have stayed with me throughout my career.
“To return with Stanley, a restaurant that reflects my Chinese heritage, my travels and everything I’ve learned over the years, feels very special.”
Stanley’s menu will draw on Tikaram’s philosophy of great food showcasing Australian seafood, meat and seasonal produce through the lens of Cantonese cooking traditions.
Tikaram grew up on a farm in Mullumbimby on the northern coast of NSW. His culinary journey began beside his Fijian-Chinese grandmother, exploring his Fijian heritage in the kitchen. He is known for his contemporary approach to Cantonese cuisine.
Stanley will join a growing portfolio of restaurants and bars operated by Artemus Group as it continues to revitalise Manly Wharf.

With its cosmopolitan buzz and relaxed vibe, Manly is a short, scenic ferry ride from Circular Quay.
