Truffle season is taking over Sydney with limited edition menus and truffle hunting experiences popping up across Greater Sydney.
It’s winter’s most indulgent ingredient and Sydneysiders can’t get enough of it: truffle fever is taking over and everywhere we look, a new dish or menu appears.
The Fullerton Hotel Sydney is leading the charge with a luxurious new tasting menu designed to celebrate the coveted ingredient. From 18 July to 30 August 2025, diners can enjoy an elegant three-course Truffle Tasting Menu at The Place, the hotelโs signature restaurant.
Crafted by Director of Culinary and F&B Desmond Carneiro, the limited-time menu is a showcase of premium black truffles sourced from Canberraโs cool-climate farm. โTruffle season is something our kitchen team looks forward to every year,โ Carneiro says. โWeโve created a menu that allows the truffle to speak for itself, elevating each dish without overpowering it.โ
The experience begins with warm Sonoma sourdough served with whipped truffle and red pepper berry cultured butter. It’s a rich, understated introduction to the flavours ahead. Next, a Roman classic gets a luxe twist: black truffle cacio e pepe, with bucatini pasta, cracked pepper and aged pecorino Romano.
For your main, the classic French dish Tournedos Rossini has been revived with a decadent combination of Black Angus tenderloin, seared foie gras, truffle pomme anna and wilted spinach served with a rich black truffle jus. Dessert pushes the boundaries of savoury and sweet with a gluten-free pear and ricotta truffle cake, layered with hazelnut sponge, vanilla-poached pear, ricotta mousse and finished with a scoop of truffle and sea salt ice cream.
Carneiro and his team sourced the truffles from The Truffle Farm near Canberra. It’s the only commercial truffle farm in the world that’s located in a capital city, just a 15-minute drive from the city centre and Canberra International Airport.
Canberra produces some of the best black truffles in the country, thanks to its cool climate โ and this year’s harvest is exceptional, according to Carneiro.
If you want to take your truffle tasting further, you can visit The Truffle Farm (it’s a three-hour drive or 55-minute flight from Sydney) and take part in a truffle hunting experience. For 90 minutes, you’ll be guided through everything you’ve ever wanted to know about truffles as you join the hunt for the elusive black truffle through the forest of 8,000 oak and hazelnut trees. Learn about the history of the farm and how it became one of Australia’s most successful trufferies, watch the dogs in action and learn how to harvest and handle the truffles, before the experience concludes with a tasting session (Saturday & Sunday, $75 per person). Brunch ($175) or lunch ($250) is an optional add-on.

If you’ve not been to Carriageworks Farmers Market, add it to your list immediately. It’s the best farmers market in Sydney, where you can shop farm-fresh vegetables, beautiful cut flowers and a wide range of treats that bring foodies coming back week after week. Through June, July and August, Hartley Truffles bring their Tuber melanosporum โ also known as black perigord โ to the market. Stock up on the goods and maybe even speak to Richard and Jane Austen about their family-run farm in the Blue Mountains.

Rovollo: fioretto with truffle ricotta and honey
The magic of a family-owned trattoria has been recreated in Martin Place, where big chains and bigger price tags usually rule. At Rovollo, truffle comes mixed with ricotta that is topped with a pool of honey. It is served with crisp, tempura-battered fioretto โ a cross between cauliflower and broccoli. Stir the honey into the ricotta for the full effect, and, paired with the crunchy fioretto, itโs earthy, a little bit floral and just the right amount of indulgence.

Robertson Truffles
This family-run farm, around two hours south of Sydney, just past Wollongong, has sold out of its weekend tours but there are still a few seats left and the Long Table Truffle Degustation Lunch on Saturday, August 9. Mark the end of the harvest season with this four-course feast complete with wine pairing.
The meal starts with sourdough served with truffle butter and local olive oil, followed by a pasta dish of hand-made fettuccine with fontina, parmesan, truffle butter and shaved fresh black truffle. For mains, there’s a choice of grilled duck breast with prosciutto and truffle jus, fillet of beed with black truffle jus and potato gratin with cavolo nero and truffle bake. Finishing things off is an indulgent tartufo di cioccolato (chocolate truffle) with clotted cream and preserved cherries. A selection of premium Souther Highlands red and white wines will also be served. Cheers to that!

Monopole: truffle set menu
Blending classic French technique with local Aussie produce, Monopole is a two-hatted favourite, where velvet curtains, vintage posters and soft lighting set the tone. Throughout July, the $160 set menu celebrates truffle season with the likes of Jerusalem artichoke tart, market fish with barigoule, Soupe V.G.E. onion soup with black truffle and foie gras, and a rich Opera Cake, each elevated with black truffle.

NOMAD Sydney: Truffle Brunch
Extended due to popular demand, NOMAD Sydneyโs Truffle Brunch is back and better than ever. This seasonal feast is a love letter to Australian produce, with truffles taking centre stage across brunch favourites like three cheese manoosh, ham hock hash browns, cinnamon morning buns with miso caramel glaze and truffle, and jersey milk truffle and chocolate magnums. It’s indulgent, inventive, and only here for a short time.
