Oysters, views and a salt & vinegar martini? Felons Seafood is now open

My interest in writing grew after completing work experience at The Guardian Newspaper in London. I then studied English Literature at University, where I was the Director of Commentary at Wayzgoose Magazine, which focused on student life, arts and culture. After moving to Sydney in 2023, I became fascinated with travel journalism and the diverse number of events and activities that Sydney has to offer.

  • Felons Brewing Co. have opened the doors to Felons Seafood in Manly.
  • The new 300-seat waterfront dining room and bar is a welcome addition to the thriving brewpub.
  • Head chef Luke Bourke will be leading the kitchen, serving fresh local seafood.

Manly Wharf just got even better, with the opening of Felons Seafood. A mere three weeks after the Felons Brewing Co. team announced the expansion, the 300-seat indoor and outdoor restaurant has opened its doors today, and this is what guests can expect.

The kitchen is headed up by Luke Bourke, who is The Sydney Morning Herald Good Food Guide‘s 2025 Young Chef of the Year. His menu pays homage to Australia’s oceans and shorelines, with seasonal, responsibly sourced seafood that make the perfect match with Felons’ iconic brews and cocktails.

Brand director Dean Romeo says, โ€œFelons Brewing Co. has already found a special place in the heart of Manly with our first venue, Felons Manly, at the Wharf, and weโ€™re thrilled to deepen that connection with the launch of Felons Seafood. This picturesque location is the perfect backdrop for what we see as a new spiritual home for Felons โ€” a space that champions simplicity, fresh Australian seafood, and our passion for great beer.”

He’s right about the location. There’s a Mediterranean-style terrace that we just know will be a favourite through summer. Sweeping views across Manly Cove paired with fresh seafood and that signature laid-back Felons vibe that locals love, we have high hopes for this new addition.

A produce-led menu

Luke Bourke has drawn on his Palawa heritage and skills honed at Rockpool Bar & Grill, to craft a menu that highlights premium Australian produce and offers contemporary and accessible dining.

Highlights of the menu include freshly shucked oysters with native kelp vinegar and cucumber mignonette, an abalone schnitzel sandwich with salted chilli mayonnaise, and Queensland mud crab seasoned with black pepper and curry leaf sauce.

Traditional fish and chips is also on the menu, and diners can choose from a selection of market fish, accompanied by Luke’s tartare sauce, which includes pickled Warrigal greens. Washed down with a Felons IPA malt vinegar, it doesn’t get much better than this.

They may specialise in seafood, but the sweet-toothed among us can indulge in desserts including chocolate opera cake, pistachio gelato or buttermilk soft serve with hazelnut oil. There’s also seasonal trifle which changes regularly and is served tableside; this season, it’s filled with port wine-poached plums. Prefer savoury? Take a look at the cheese selection, which includes Milawa camembert and other Aussie cheeses.

Coastal cocktails and cold lager

The drinks menu naturally showcases the Felons beers on tap, including their Super Cold Crisp Larger (the coldest in the country, served sub-zero) and that beautiful Japanese Rice Larger.

There’s a lengthy wine list, too, however, which showcases a range of Australian white, rosรฉ and chilled red wines from Hunter Valley and Margaret River, alongside European varieties. A natural pairing with seafood. In the mood for bubbles? The sparkling selection ranges from Australian blanc de blancs to Champagnes from the likes of Louis Roederer and Ruinart.

Our eyes immediately went to the cocktail menu, though โ€” particularly the salt and vinegar martini. Oyster Shell gin is blended with vermouth, caperberry brine and chardonnay vinegar, and sounds like the ultimate tipple to enjoy on the Wharf. There’s also a Seaside Old Fashioned with macadamia, coffee, maple and a hint of salt, and a dangerous-sounding Fish House Punch.

From first bite to final sip, Manly is about to fall even more in love with Felons thanks to this new arrival.
