- QT Hotels & Resorts has worked with Black Star Pastry to create two bespoke Valentine’s Day cakes.

Cult-favourite bakery Black Star Pastry and QT Hotels & Resorts are getting onboard with Valentine’s Day indulgence this month, nodding to the neologisms of modern dating with two bespoke cakes, The Love Bomb and The Ghost.
The creators of the world-famous Strawberry Watermelon Cake have taken on a more lustful bent with these decadent cakes, translating dreary dating stories into layers of rich, sumptuous treats that sit on QT’s limited-edition Eat Your Heart Out menu, which is available at each of the luxury hotel group’s restaurants across Australia, New Zealand and Singapore.
That means both QT Sydney and QT Bondi have this cake waiting for you, not just on Valentine’s Day, but all month long. You can grab them at QT’s signature restaurants as well as via room service if you’re up for a romantic staycation.
The Love Bomb rests on a chocolate financier base, built up with velvety chocolate crèmeux and topped by soft, airy chocolate sponge. A chocolate mousse ganache holds it all together while a second layer of chocolate sponge and mousse ganache doubles down on the excess. Add a red streusel on top with a garnish of raspberry chocolate shards and you’ve got that overly sweet, full-tilt journey into the many shades of chocolate.

On the flipside, The Ghost is a dance of light and refreshing flavours playing off each other. But your tastebuds won’t be left confused and bitter, with Black Star Pastry’s intricate profile striking that fine line between lightness and richness. It starts with a soft sponge cake as the base, topping that with a crunchy texture with creamy vanilla mousse and a strawberry and raspberry compote for contrast. Add another layer of sponge and vanilla mousse with a chocolate truffle garnish and milk-chocolate coating—chef’s kiss.
Both cakes will be available from Valentines Day, February 14 and be available right up until February 28 for $18 each.
QT Gold Coast’s head pastry chef Daniel King and Black Star’s group head pastry chef Arnaud Vodounou are the brains behind both creations, playing off both Black Star Pastry’s reputation for imaginative treats and QT Hotels’ famously flirty aesthetics.
“The key for both Arnaud and I when creating the cakes was for it to feel like a true collaboration of brands and flavours,” said King.
“The V-Day cakes play on the subtle nods of flair we are known for at QT along with our use of premium ingredients, whilst creatively spinning a signature Black Star Pastry masterpiece to do things a little bit differently.”
To further celebrate, each of the QT Hotel properties is giving diners a chance to win an overnight QT stay every week of the month. Both cakes will be available from Friday, February 14 to Friday, March 14.
