Cammeray’s Sushi Oe is generally considered the finest sushi bar in Sydney. Certainly the hardest to get into. For years, owner-chef Toshihiko Oe has watched his tiny six-seater sushi bar become one of the most sought after bookings in the entire country, with monthly text-based reservations selling out within minutes.

Now, he’s moving the whole thing into the new Sydney Fish Market at Blackwattle Bay.

We’ve already been dazzled by the LED-activated roof of the new Sydney Fish Market, destined to become a visual icon for Sydney’s skyline. Locking in the city’s highest-rated Japanese restaurants is a masterful move for the institution, not only bringing Oe closer to the produce central to his practice, but making the experience infinitely more accessible and approachable for both locals and visitors.

Oe has gone on record to say the Sushi Oe experience will still be the same once he relocates to the $836 million development. He’ll have two extra seats, making scoring a reservation an inch easier, and according to Good Food it’ll be set in a seperate restaurant space within a wider tenancy by premium seafood supplier GetFish.

GetFish also has plans to introduce a massive sushi train nearby, while other restaurants at the Blackwattle Bay development will include a new multi-course kaiseki concept by chef Toru Ryu (of Neutral Bay’s popular Restaurant 16), something new and exciting from the Ho Jiak team, and a restaurant from celebrity chef Luke Nguyen.

While we’re still waiting to see how these concepts take shape ahead of Sydney Fish Market’s opening, which could open anytime between November and early next year, we do know that there’ll be another sizeable Japanese restaurant incoming. Ichie is a new joint venture between Hokkaido’s Takao Muramoto and Sydney restaurateur Libras Ting and Hakatamon Ramen’s Hide Tsuboi.

Coastal hamayaki-style seafood BBQ and ramen will be the 176-seat restaurant’s primary offering, unlocking a new angle to Japanese food that has never been seen in Sydney before. Talking to Good Food, Tsuboi said there are plans to add traditional iron-pot seafood rice, known as kamameshi, to the menu as well.

When will Sydney Seafood Market open?

Earlier this year it was reported that the new Sydney Fish Market should be readied in October for a public opening in November. The wavy roof’s kinetic lighting installation was revealed in August, so I imagine handover is just about ready.

November is quite soon, though. And the Christmas rush at Sydney Seafood Market is pure chaos at times. I don’t imagine the owners would want to go through the process of public openings while also preparing for the holiday period. In which case, I wouldn’t be surprised to see this pushed back until January, placing the opening right in the middle of the busy summer season.
