In 2023, three-Michelin-starred English restaurant L’Enclume, currently ranked the no. 1 restaurant in the world, staged a high-profile five-week residency at Bathers’ Pavilion. The waitlist swelled to 2,000 tables.
Much like when Rene Redzepi’s Noma famously dominated Sydney’s dining scene for ten weeks, many thought the L’Enclume Sydney residency was a one-off. Turns out they were wrong, with farm-to-table pioneer Simon Rogan MBE heading on back to the waterside stunner from July 16, 2025 to August 24, 2025.
“Bathers’ Pavilion is the only place outside of Cartmel that has served a L’Enclume menu, and remains the only place – this is because of the depth of trust and collaboration we have in our relationship with Jess, Tom and their exceptional team,” explained Rogan.
“The 2023 residency was about taking what we do in Cartmel and The Lake District and bringing it to Sydney, reproducing it and supplementing ingredients with Australian produce.”

L’Enclume’s second wind in Sydney comes with a punchy price tag. You’re looking at a 14-course tasting menu including snacks and petit fours for $590 per person. Wine pairings will play a big part in the food, and a number of options are available on the night at either $230, $350, $590 or $1,200 per person. Non-alcoholics can also grab a pairing for $120 per person.
The restaurant will offer an exclusive cellar list with the option to pre-arrange rare vintages and bottles prior to the booking date.
Similar to the 2023 residency, L’Enclume Sydney will elevate every aspect of the dining experience, using Bathers’ Pavilion’s gorgeous venue to transport guests to Britain’s bountiful Lake District. This means, in addition to the all-new menu and cellar list, guests can expect custom crockery, hand-forged cutlery, glassware, bespoke art installations, table settings, uniforms and more.

Rogan is bringing a team of 15 chefs and front-of-house staff over with him, working with Bathers’ Pavilion Executive Chef Aaron Ward on transforming the L’Enclume dining experience with Australian produce. The menu on offer will consist of small, complex dishes all anchored by Rogan’s concept of the “perfect ingredient.” That is, a notion that perfection starts with produce and isn’t possible without the perfect vegetable, herb or fruit, for example.
Bookings for the residency will open this Thursday, February 13 at 10am via the Bathers’ Pavilion website. Sittings will be for both lunch and dinner with only two services a day for 80 diners at a time. The tasting menu should take 2.5 hours but the team will be flexible depending on each guest.
