Bar Planet is dedicated to the timeless classic, the martini, which may lead you to expect a sleek, minimalist space. But don’t be fooled—things come with a twist at this Newtown spot. From psychedelic decor and dripping candles to their take on a dirty martini, with seaweed and brine as well as three olives, visitors know to expect the unexpected.

There are few things better than enjoying a martini or two with your besties, but Bar Planet has taken things a step further by creating cocktails with their neighbourhood friends. The brand-new BFFs menu features three drinks, each created in collaboration with a local producer.

What’s on Bar Planet’s BFFs menu?

The selected besties are A.P Bakery (they’re everywhere nowadays), Goldstreet Dairy and Rooftop Bees. They’ve offered up their top-notch bread, cheese and honey to the expert bartenders, who have crafted the new inspired cocktails.

Velo – A.P Bakery

The baked good connoisseurs who seem to be taking over Sydney one bakery at a time have got their fingers in another pie. Working with Bar Planet, they’ve created a buttery cognac sour with beautiful toasty notes. Cognac is paired with Puneau fortified wine, lemon and egg whites. What you’d expect from a cognac sour, right? Well, the special and defining ingredient that brings the ‘breadiness’ is AP’s baguette syrup. According to Bar Planet, the foamy concoction “taste like Paris by way of Enmore”. Sign us up.

Buzzcut – Rooftop Bees

If you’ve not heard of Rooftop Bees, they’re the urban beekeepers that are transforming Australia, hive at a time. The flavour profile of the honey is influenced by the pollen that the bees collect, so using local hives means the honey has a specifically “Sydney” flavour.

For their Bar Planet beverage, Rooftop Bees have provided honey produced by the four bee colonies that call Carriageworks home. The Buzzcut combines hot honey—fermented with chilli—Hendricks gin, gentian and lime to create a perfectly sweet and spicy take on a gimlet. If you’re partial to a spicy marg, give this a try.

Scarlett – Goldstreet Dairy

Goldstreet Dairy is the Marrickville micro-cheesery that is dedicated to using high-quality milk, produced by well cared for cows, to create their cheeses. How does this translate into a cocktail? Great question. Scarlett is a creamy spritz that combines rhubarb-infused pinot grigio with Bar Planet’s one-of-a-kind martini master stock, and Goldstreet Dairy’s sour whey. We’re partial to cheese and wine but we’ve never thought of adding them together in one glass. It may sound unusual but the addition of the cheesemaking byproduct creates a gorgeously silky texture and zingy flavour.

Weird and wonderful has always been the name of the game at Bar Planet, and this new trio certainly lives up to that. The BFFs menu is available at Bar Planet now.
